Maddox is a wise boy. Me, not so much (wise or a boy). He has been full of words of wisdom lately.
He usually starts by saying “Okay Mom, so I need to talk to you…”
Yesterday’s words of wisdom were “If you need money, you should pay on the house and if you don’t need money, you should pay on the kitchen.” Interesting. I don’t know where he gets this stuff from but he makes me laugh. He’s a special one.
So for my special, wise boy I have a super simple special snack. I think we used to have this when we were kids but instead of dipping apple slices in it we stuffed it in a cored apple. Coring an apple is way to labor intensive for me so I just stick to slices these days. This recipe is totally flexible so feel free to add or take out whatever you want. I didn’t measure amounts either so these measurements are just guesstimations.
Peanut Butter Dip
Makes about 1/2 cup dip
1/3 cup natural peanut butter
3 tablespoons unsweetened coconut
1/4 cup raisins
2 tablespoons honey
Optional add-ins:
Nuts
Chocolate Chips
Craisins
Flax Seeds/Meal
Gather your ingredients.
Put everything in a bowl.
Stir it around and set aside.
Now slice up an apple.
And that’s it. It doesn’t take wisdom to make this. I guess that’s why I make the snacks and Maddox imparts the wisdom. Oh, and one more thing, if you need money pay on the house..works every time

I was just thinking the other day about some tandoori chicken wings that you made for us one time that were so good and I was thinking I should ask you for some of your recipes. And the apple slices..good idea..right? I mean who wants to eat a whole apple just to get to all that peanut butter goodness!
Whoops, didn’t mean to send that yet. Anyway, I was commenting because I remember those things and was thinking that slicing the apples rather than stuffing them was a great idea. I remember not being a huge fan of those things because of the pb mix being in the middle and having to eat a lot of plain apple to get to it but apparently i couldn’t solve that simple problem then.
